Pork Loin with a Courgette Salad

I saw this recipe on 'Jamie's 15 minute meals', now normally I do not see alot on the TV that I actually want to cook but this just looked sooooo good I had to give it ago.

Pork loin cut into 4-5 thick pieces
Feta Cheese
4-5 Courgettes sliced thinly
Mint (as much as you fancy) sliced thinly
Garlic, sliced thinly
1 chilli sliced thinly
1 diced onion
Olive oil


Cut the pork loin into medallions, make a small slit in the top of each and stuff with a cube of feta cheese, top with a slice of prosciutto. Slice the courgette thinly, chop all the veg. Put two frying pans on to heat with a generous amount of olive oil in each. Once hot add the pork to one, prosciutto side down, to the other add the courgette and other ingredients. After five minutes turn the pork and leave for a further five to cook through. Keep stiring the courgette so that it cooks evenly. Once everything is cooked serve and enjoy.
