Banana Pancakes

These pancakes are great for  quick breakfast (yes it takes longer then chucking cereal and milk into a bowl).


Ingredients:
1 banana
2 Eggs
2 tbsp flax seeds
1 tsp coconut oil or butter

Method:
Place all the ingredients into a blender (or mush really well together), heat a tsp pf coconut oil or butter in a frying pan (I use a small one enough for one thick pancake), fry on one side for around 3 minutes, then flip and cook for a further minute.......simples. I then top with natural yogurt and berries.
